Background and Cultivation:
Dragon Well or "Lóngjǐng" tea has been recognized as one of the finest tea varieties since the Míng Dynasty. In the Qīng Dynasty it was made the official court tea by the Qiánlóng Emperor. Our Dragon Well tea is grown on Fēngwù Mountain outside Hángzhōu, on a beautiful tea-farm owned and operated by a seventh-generation organic tea farming family. The leaves are first carefully selected and picked by hand. They are dried in bamboo baskets in the shade and then immediately sent to roasting to prevent oxidation. The processing of Dragon Well tea is more complex than other green teas, involving a succession of roasts. It will be repeatedly roasted, cooled and moistened, and inspected by the tea master until the desired taste, aroma, and appearance have been achieved. When produced using traditional hand roasting techniques a series of up to a dozen specific movements and gestures are used to pan fry and shape the leaves.
Green tea has first and foremost been regarded as a delightful and invigorating beverage. It has also won a strong following among herbalists, traditional medicine practitioners, as well as a growing number of wester doctors who credit it with a variety of health benefits. The most commonly cited are improved mental alertness and cognition, slowing the effects of aging, and an ability to boost the immune system against illnesses (like the flu), diseases (especially osteoporosis and diabetes), and fighting certain cancers. Studies have found promising results for the use of green teas in the prevention or treatment of arthritis, Alzheimer’s, dementia, Parkinson’s, among other conditions. It is also believed to help relieve headaches, improve dental health, prevent bad breath, and assist patients suffering from diarrhea and vomiting.
