Dragon Well Tea or Lóngjǐng Tea has been recognized as one of China’s finest tea varieties since the Ming Dynasty (1368-1644).
Two key steps in preparing Lóngjǐng tea are the careful selection of the tea leaves followed their air drying on a bamboo mat. After this the more complex process of roasting the leaves begins. Traditionally this was performed by hand by a tea master using up to a dozen different specialized hand movements that to flatten, fluff, rotate and squeeze the leaves, often in a process of repeated roasts, until the desired aroma, color, form and flavor was achieved.
